| Directions | Suggested daily consumption is 2 to 3 cups of a 3-4 gram infusion. DO NOT use boiling water as this can burn the leaves. By adding cold water first, enough to just cover the leaves, and then adding in your boiling water this will help to avoid burning your Maté. The flavor tends to be more bitter if the herb has been burnt. Adjust the amount of herbs based on individual preference, constitution, and purpose. Leave to infuse for about 5 minutes. Add a touch of honey if desired. Many prefer half the amount of herb for enjoyment and double the amount when there is a medicinal need. |

| Ingredients | South American Yerba Maté Herb Activities, Applications, and History: Maté (Ilex paraguarensis) is an evergreen member of the holly family. It grows wild in Argentina, Chile, Peru, and Brazil, but is most abundant in Paraguay where it is also cultivated. The plant is classified vaguely, according to Western herbal medicine, as an aromatic, stimulant, bitter, aperient (laxative), astringent, diuretic, purgative, sudorific (sweat inducing), and febrifuge (fever reducing). Maté contains numerous vitamins and minerals. It is brewed from the dried leaves and stemlets of the perennial tree. In the wild, the plant needs about 25 years to develop completely, reaching in that case a height of up to 15 meters. Maté is as tea-like beverage that has a characteristic mature flavor which is somewhat sweet, bitter, withered leaf like, and alfalfa-like, similar to that obtained from tea (Camellia sinensis). The flavor of Maté will depend on many factors such as how the herb was grown, harvested, dried, and brewed. Of the 196 volatile chemical compounds found in Yerba Maté, 144 are also found in tea. The infusions of Maté (Ilex paraguarensis) are generally less astringent than those made of tea. Yerba Maté contains 11 polyphenols. Polyphenols are a group of phytochemicals. Phytochemicals (phyto- meaning plant) are recently-discovered compounds that act as powerful antioxidants and are considered to exhibit anti-cancer effects in mammals by strengthening an organism's natural defenses and protecting it against cellular destruction (i.e. lycopene in tomatoes, flavonoids in blueberries, and isoflavones in soy). In addition to polyphenols, Yerba Maté leaves contain saponins.
